Nutrition - Whole Food Cooking

You will develop healthy shopping habits and culinary skills; learn
how to eat a produce-dominated diet; find out where to buy and how to
prepare high quality vegetables, fruits, animal products, nuts, seeds,
friendly fats and oils, herbs, spices, and natural sweeteners using as
much local, seasonal, pasture-raised, and organic food as possible.
Some classes will include the preparation of whole grains and beans;
however, these foods will make up a minimal part of the course
relative to fresh produce and protein rich-foods.

This 5-week course covers basic kitchen equipment, kitchen
organization, meal planning and prep tips, and recipe modification.
Each 4-hour class features a mix of demonstration, lecture, and hands-
on, and includes the preparation of an entire meal. Space is limited.
Recipes and menus will be gluten-free with optional dairy-products in
some classes. NON-REFUNDABLE ONE CALENDAR MONTH PRIOR TO START DATE. Supplies $60. Text: $40, Material fee: $10 NA Age restricted to 18 and over. NO PRERQ

1) You must wear closed toed shoes! No exceptions. Do not wear high heels! Anyone barefoot or wearing flip flops will be turned away.

2) Pull your hair back in clips, a rubberband, or hair ties if it is longer than ear or mid neck length.

3) Bring an apron to every class

4) Bring 3 clean dish towels + 1 wash cloth size towel

5) Bring 1 chef knife or Japanese vegetable knife and 1 paring knife; I recommend you buy a knife guard for each knife to travel safely with it.

6) Consider having your name engraved on the knife blades or handles.

7) Bring a copy of The Garden of Eating for WFCI; bring a copy of The Garden of Eating and The Ice Dream Cookbook for WFCII; also bring pencil or pen and paper. Books are available in SWIHA's bookstore and at Changing Hands Books in Tempe.

Note: You will be responsible for laundering your your apron and towels each week and keeping track of your knife. Consider buying a tote.

Please plan to arrive 10 minutes early to take your stations so we can start promptly. Come hungry, you'll have a chance to eat in each class!
